Home made Pav Bhaji


Pav Bhaji Recipe :

Pav Bhaji is one of the most popular dish especially in maharashtra.
This is one of the first few dishes which comes to my mind when you have to provide a nice hot meal in a hurry and one that tickles your taste bud.Try to include more veggies so as to make it healthy.


Prep Time : 25min 


Ingredients:

Potatoes : 3 
Peas : 1/2 cup
Carrot : 2 (peeled and chopped)
Cauliflower : 1 cup(chopped)
Capsicum : 1/2 cup(chopped)
Onions : 2(chopped finely)
Ginger-garlic paste : 1 1/2 tsp.
Pav bhaji masala : 2 tblsp.(available on all Indian store)
Turmeric powder : 1/4 tsp.
Chilli powder : a pinch
Tomato puree : 1/2 cup
Oil : 2 tblsp. , Butter : 1 tblsp.
Salt to taste
Lemon juice : 1 tblsp.
Fresh Coriander : 1/3 cup(finely chopped 


Procedure:

  1.  Take enough water to boil the potatoes(peeled),peas,carrot,cauliflower,capsicum together in a  cooker.Cook for 10min-15min till the veggies are cooked properly.
  2.  Till the veggies are cooking, grind tomatoes to make puree and keep aside.
  3.  After the cooker cools down, take out the veggies mash it well with a veggie masher or using back of your spatula.
  4.  In a heavy bottomed pan, add oil / butter.When the oil/butter is hot, add the ginger-garlic paste,chopped onion along with a pinch of salt and saute it till they are nicely soft and transparent.
  5. Add chopped tomatoes/tomato puree to the pan. Add Pav Bhaji masala, salt and red chilli powder to the pan and mix well.
  6. When the tomatoes and onions are fully cooked, add mashed veggies to the pan and give a nice mix.
  7. Add water to make the consistency little thinner. Add coriander and butter.
  8. Delicious PavBhaji is now ready to serve with Pav. Roast the pav with butter .Serve the hot Pav Bhaji   with freshly chopped onions,corriender and lemon slices and enjoy your dish!!

Gajar Halwa

Gagar ka halwa
Gajar halwa (Carrot Halwa) Recipe:

One of the most popular Indian dessert it combines flavour and health benefits into one. Carrots contain so much beta-carotene that it acts as an antioxidant to fight against cell damage and thus slowing down the process of ageing & also helpful for our eyes.


 
Prep Time: 10 Minutes  


Ingredients:-  

Carrot- 1kg 
Ghee-1/4 cup
Cardamom green-3,4
Sugar- 1 cup
Dry fruits(for garnish)
Milk-1 litre 

Method:-

1.      Peel off the skin of carrot and wash it. Grate the carrots.
2.      Add Ghee, cardamom in a large pan or wok then add grated carrots to it.
3.      Cook it on medium flame until the milk is reduced and carrot is cooked.
4.      Keep Stirring occasionally or it might come out of pan as the milk rises.
          5.   Add dry fruits mix it well and cook for another 2-3 minutes on medium flame. Gajar halwa is ready, serve hot/cold.

MahaShivratri Special Recipe


Rajgira Sheera/Halwa Recipe:


A sweet dish made from amaranth flour, white granulated sugar and milk. It is flavoured with cardamom powder and garnished with chopped almonds.
Usually ate on fasting days but should be included in daily routine as it contains more than three times the average amount of calcium.



  Prep Time:- 15 min






Ingredients:-
Ghee (Clarified butter) – 4 tablespoons
Rajgire ka atta (amaranth flour) – ½ cup
Milk – 1 ¼ cups
White granulated sugar – ⅓ cup
Cardamom powder – ¼ teaspoon
Almonds (or cashews) – 1 tablespoon, chopped




Procedure:-
1. Roast the rajgira till you get the toasted, nutty aroma of the flour. It gets slightly brown in color. It will take about 4-5 minutes.
2. Once flour is roasted, add the warm milk-sugar mixture. Be Careful it will be bubbly and splutters.
3. Immediately mix well using spatula.
4. Continue cooking with stirring constantly till it gets thick, all the moisture is evaporated. And the ghee starts to ooze out from the sides. Also the sheera will leave the sides of the pan. Then turn off the stove.
5. Lastly add cardamom powder and chopped nuts.
