Rajgira Sheera/Halwa Recipe:
A
sweet dish made from amaranth flour,
white granulated sugar and milk. It is flavoured with cardamom powder and
garnished with chopped almonds.
Usually
ate on fasting days but should be included in daily routine as it contains more than three
times the average amount of calcium.
Ingredients:-
Ghee (Clarified butter) – 4 tablespoons
Rajgire ka atta (amaranth flour) – ½ cup
Milk – 1 ¼ cups
White granulated sugar – ⅓ cup
Cardamom powder – ¼ teaspoon
Almonds (or cashews) – 1 tablespoon, chopped
Procedure:-
1. Roast
the rajgira till you get the toasted, nutty aroma of the flour. It gets
slightly brown in color. It will take about 4-5 minutes.
2. Once
flour is roasted, add the warm milk-sugar mixture. Be Careful it will be bubbly
and splutters.
3. Immediately
mix well using spatula.
4. Continue
cooking with stirring constantly till it gets thick, all the moisture is
evaporated. And the ghee starts to ooze out from the sides. Also the sheera
will leave the sides of the pan. Then turn off the stove.
5. Lastly
add cardamom powder and chopped nuts.
